Hello beauties!

Dips are a staple for any summer parties or gatherings. Today, I want to share with you one of my favorite homemade dips. 

So let's get to it!




Ingredients:



2 cups baby spinach (washed, dried, and roughly chopped)
0.5 onion (finely chopped)
4 cloves garlic (finely chopped)
0.5 cup grated pepper jack cheese
2 tbsp extra virgin olive oil
0.5 tbsp roasted red pepper flakes
1 tbsp cajun seasoning
salt and pepper to taste
2 cups water

Directions:

Preparing the spinach:

1. In a pot, boil the 2 cups of water with the spinach. Boil the spinach for 3 to 4 minutes.


2. In a strainer, drain out the water, and place the blanced spinach in a bowl covered with paper towels. (This will help preserve the green color of the spinach).

3. Allow it to cool while you work on the other part. 
4. In that same pot, add the olive oil and then add the chopped garlic and onion.
Tip: To make this recipe even healthier, use organic extra virgin olive oil. The EVOO I used is from my cousin's in - law's orchards. 

4. Sauté the garlic and onion until it reaches a golden brown color, and then add the Cajun seasoning and the roasted red pepper flakes. 


5. Add the spinach and the cheese.


6. Cook until the cheese is completely melted. 


Voila! Your dip is ready. I enjoyed my dip with bell peppers. 


Recipe makes about 6 servings. 
1 serving size is 2.5 tablespoons.
120 calories per serving
Time - 15 minutes.
